Muffins, July 4th & an Essential Oil Spotlight

Welcome back! 


Today I have for you the promised toddler muffin recipe, a little 4th of July throwback moment and a fun diy project for a great nights sleep! 


We'll start off with a glimpse into my life from a 4th of July past to a full circle moment with my babies. In the neighborhood I grew up in, there was an annual 4th of July parade where families united to deck out bikes, wagons and scooters in the best dollar store decor and parade through the neighborhood dressed in our most adorable red, white and blue. Although I do not have vivid memories of this event due to being so young, I do remember the picture of myself in all my American flag glory that hung on our refrigerator for years engraining that beautiful memory in my mind forever. This week, along with my mom, I loaded the kids up and headed to the dollar store to buy all the glitter loaded 4th of July goodies. We then obnoxiously decorated my baby boy's stroller and toddler's wagon so that we could participate in their first neighborhood 4th of July parade. Not only did we get the picture of my littles to hang on the fridge for their memory, I had the opportunity to reflect on just how grateful I am that my parents made the effort to create these memories for me & now walk alongside me and my husband to nurture amazing memories with our kids. 

RECIPE OF THE DAY

For all of you with little ones who are beginning their journey to the dinner table, I have a yummy recipe for you! Whether you are jumping all in with Baby Led Weaning or you have a little eater that needs a fun new flavor, this is the recipe to try. It requires no flour, no sugar and is a great way to use those bananas that are just a few days past ripe that you don't want to waste. 


Banana Oat Muffins

Mix the following dry ingredients together in one bowl.

3 cups - old fashion oats

1 1/2 tsp - baking soda

1/2 tsp - salt

3 tsp - cinnamon

1 tsp - nutmeg

1 tsp - allspice

*If you do not have one of the spices on hand, feel free to use more of one you do have or another in your cabinet such as pumpkin pie spice, cardamon or cloves. 

In a separate bowl, whisk your eggs, add mashed bananas and your puree of choice. 

3 eggs

3 ripe bananas

3/4 cup - puree(applesauce, canned pumpkin or even a kids pouch you have in your pantry) 

Optional: Add 6-10 tbsp maple syrup for sweetness if your little one is ready for a little indulgence or if you would like to enjoy a muffin yourself with your morning coffee

Once your wet ingredients are mixed, add them to your dry ingredients until well incorporated. Scoop mixture into a greased muffin pan and bake at 350 degrees for approx 15-18 mins. This will make about 18 muffins. Let cool and let your little one enjoy a treat! 


My 20 month old asks for a muffin most mornings and sometimes throughout the day so it goes without saying these are a favorite in our house! Because I cannot make muffins daily, we do freeze them once cooled in a single layer inside a zip top bag. We can then pull them straight from the freezer to eat and serve anytime her little heart desires! 


ESSENTIAL OIL MOMENT - DIY Pillow Spray

I will wrap up today by sharing a peek into my love for essential oils and one of the ways we use them daily. My love for essential oils and non-toxic products has grown tremendously over the last few years especially since having children. It is important to me to use the safest products on and around them to promote wellness for all of us. I have enjoyed my journey of learning about the many different uses and applying that knowledge of how to live daily life supported by these powerful concentrates that are essential oils. One of the simplest ways we use them is for sleep support. As a busy mom, shutting my brain down at night can be a difficult task. One of the strategies I use to calm down and set myself up for a good nights sleep is my diy pillow spray. A few spritz on my pillow and I can create a peaceful aroma to signal my brain to rest. The recipe is as follows...

In a 3oz glass spray bottle, combine...

3oz - witch hazel

10 drops - lavendar essential oil  

6 drops - cedarwood essential oil 

4 drops - bergamont essential oil 

3-4 drops - clary sage essential oil(only use this one if not pregnant as it has been shown to contribute to contractions)
